Swedish Princess cake (Prinsesstårta)

The Traditional Swedish Princess cake (Swedish: prinsesstårta) is a layer cake consisting of alternating layers of light sponge , filled with  pastry cream, Raspberry Jam and topped with a thick-domed layer of whipped cream. The cake is then covered by a layer of green marzipan, giving it a smooth rounded top.


The cake first appeared in the 1948 Prinsessornas kokbok (cookbook), which was published by Jenny Åkerström (1867-1957), teacher to the daughters  (hence Princess cake) of Prince Carl, Duke of Västergötland.]
