Bread rolls with sunflower seeds

I make these rolls all the time, they are wonderful served warm with cheese and butter. I tend to make a batch to freeze down, so that I always have som on hand, then all I need to do, is pop them in the microwave for a couple of minutes on defrost and voila! Delicious rolls whenever I want.


Ingredients


1kg white bread flour


2ts salt


1 pack of dried yeast


dash of olive oil


700ml lukewarm water


150gr sunflower seeds


Instructions


Add all the dry ingredients to your mixer bowl (or a large bowl, if you don't have a stand mixer), but make sure that the salt and yeast are not touching initially, as salt will kill the yeast. Fill a measuring with the lukewarm water, then add that and the oil to the flour mixture. Attach your dough hook and set the mixer to a low speed for 5-10 minutes , until the dough is smooth, elastic, and has a slightly tacky texture. Then add the sunflower seed and mix for a couple more minutes, until the seeds are evenly disbursed.

(If you don't have a stand mixer, then mix in your bowl until the ingredients have mad a soft dough and turn the dough onto a lightly floured surface and knead for 8-10 minutes.)



Cover the bowl with cling film and let the dough rise in a warm, draft-free place for about 1 hour, or until it has doubled in size. I usually set my oven to 30 degrees Celsius and let my dough rise there, especially in the winter when the house is colder.

When the dough is ready, punch it down to release the air, then turn it out onto a lightly floured surface and divide into equally sized pieces. I usually get approximately 25 rolls from this dough, but it depends on how small or large you decide to make them.

Place the dough balls on baking paper lined baking tray, allowing some space between them. Cover them with a clean tea towel and let them rise again for 30-60 minutes until they've almost doubled in size.



Preheat the oven to 220°C. Brush the tops with an egg wash and sprinkle some sunflower seeds on the top. Bake for 10-15 minutes, until golden brown and the bottoms sound hollow when tapped. Enjoy!
