Oat & Cranberry Biscuits

I love these oat biscuits, they are crunchy and chewy at the same time and you can add virtually anything to them. I like them with cranberries, but you can add chocolate, nuts, or any other dried fruit. They are also nice plain, so if your cupboard is a bit bare, you can still bake and enjoy delicious biscuits.
Ingredients
135gr flour
1/2ts bicarbonate of soda
12ts baking powder
1/2ts salt
1ts ground cinnamon
1ts vanilla
115gr salted butter (softened)
100gr sugar
110gr light brown sugar
1 egg
120gr oats
150gr cranberries

Instructions
Preheat oven to190 degrees Celsius
Line two large baking sheets with silicone baking mats or parchment paper. Set aside.
Put butter and sugar in a bowl and use your mixer to beat until light and fluffy. Then add the egg and mix well. Combine all the dry ingredients, apart from the oats, and sift into the mixture and beat until it is all combined, then add the oats and set your mixer on a low speed for about 30 seconds. Finally, chop your cranberries, so the pieces aren't so big, then add to the dough and mix until evenly distributed.
Wrap the dough in clingfilm and let it rest in the fridge for an hour, or overnight, then, if you have a cookie scoop, use that to measure out portions of dough. I make mine approximately the size of a walnut.
Roll the dough into balls and place evenly spaced on a baking paper – about 7-10cm apart.
Gently press down the tops of the biscuits, then bake in the oven for 8-10 minutes until the edges are lightly browned.
Let the biscuits cool down for a few minutes, before transferring them to a wire rack to cool.
